 You can keep working on STEM OPT up to your SEVIS release date (as long as that is before your EAD end date), but not after: OPT work authorization ends automatically when your record is transferred to the new school. You can work again only once the new school approves your CPT, so plan a short unpaid break between the two dates. Have your current DSO and our senior admission consultant confirm the release date before you tell your employer anything.
